Zucchini Spaghetti ! AHHHH!

I did it before Stanley Tucci made it viral... I won't say anymore about it, because I do like him. Also I am sorry this recipe is about 4 days later than what I promised.... I guess I'm a liar ! So make it this weekend if (like I said) your refrigerator is overflowing with zucchini or you have a boyfriend ( or a son whose name is Alex) who is a vegetable hoarder and food pusher. There ! I Said it !

This dish is fab and easy and delicious and you can make so many variations.



Ingredients

3-4 small to medium zucchinis cut into thin circles

1 cup starchy pasta water

1 lb bucatini or brassy-er thick spaghetti ( a linguine would work well too)

2 cups grated Parmesan - plus more for garnish

2 tablespoons butter

pinch of salt

freshly cracked pepper

1 tsp.red chili flakes

1 cup herbs ( parsley , dill, or basil ) - I used all three

3 cloves garlic- thinly cut

1/4 cup olive oil plus more for garnishing



  1. Boil a large pot of water for your spaghetti , heavily salt, once water comes to a boil - throw in spaghetti of choice and cook until al dente ( about 9 minutes) . Set a mug full of pasta water aside before draining. Set aside after draining. Toss lightly with olive oil to avoid sticky spaghetti.

  2. Take a shallow wide sauce pan and heat up your 1/4 cup of olive oil on med-high heat . Once hot, throw in thinly sliced zucchini, stirring occasionally, cook until slightly crispy and browned. Once finished, take out and set zucchini on a plate lined with paper towels to drain excess oil. Set aside

  3. In the same pot and with the same oil used to cook zucchini , throw in garlic and chili flakes. Let sizzle and infuse into hot oil ( about 1 minute) . Add your tablespoon of butter and about 1/2 of your pasta water and let simmer ( another 4 minutes ) or until a slight sauce begins to form, you're looking just for the slightest bit of thickness. Add in zucchini and spaghetti. toss. Add in salt and pepper to taste, toss.

  4. Continue to toss with heat on low-med , add in your parmesan and the rest of your pasta water , toss toss toss, and toss in herbs and toss toss toss ! A glossy cheesy yummy sauce should have formed, continue to keep heat on low if sauce needs to thicken more. Garnish with extra herbs, extra parmesan and extra chili flakes if desired !!!
