If I could get famous off of this cucumber kimchi, just like Tik Tock Logan the cucumber guy who became famous for his stupid shaken up cucmber salad- which by the way newsflash Logan- YOURE JUST BEING EFFICIENT AND EVERYONE DOES IT, than life would be different. I suppose it's similar to the idiots standing infront of a Jackson Pollock, or Wassily Kandinsky painting and saying " I couldve done that!" and seriosuly in this case: I COULDVE DONE THAT, but moral of the story: I didnt. So here I am, making my unfamous cucmber kimchi, the same way famous Logan makes his, but everytime he does it- he makes a couple thousand, and I just get a fabulous, and very easy, quick way to make kimchi.
Kimchi is fermented, but honestly who has time for fermenting.. I am not minimizing the art of fermentation, but I am making a truthful and I think relatable statement that not everyone wants to ferment or has the patience to. This Quickie Kimchi encomapsses all the beautiful, salty umami flavors of a kimchi, but leave out the funk. Its something I make at LEAST 4 times/ week and can thuroughly enjoy on its own or with no more than a bowl of warm rice, but as I mentioned, This is a great thing to pair with my eggplant and tomato recipe posted the other day.

You will need Korean red chili flakes ( Gochugaru) - Unfortunately, there is no subsitution for this. I order mine from amazon, but your grocery store may carry it in their asian grocery section. Get down with the fish sauce- its a must
Just like falous Logan ( blah) I do add everything into a quart contained and shake up all of the ingredients at once and let sit for about 20 minutes before eating just so all the flavors have time to sit together
Serves 2-4
Ingredients
2 tablespooons of Korean Red chili flakes
2 finely moniced or grated closes of garlic
3 scallions chopped
2 cucumbers sliced thinly
1 tablespoon fish sauce
1 teaspoon soy sauce
1 teaspoon fresh or drie ginger
2 teaspoons sesame oil
1 teaspoon sesame seed
2 teaspoons sugar or honey
1 pinch salt
1 teaspoon rice wine vinegar
Place all of your ingredients into a large quart container ( or bowl, whatever) and shake ( or mix until cucumbers are well coated). Let sit for 20 minutes before eating with a bowl of rice, or with my tomatoes and eggplant recipe:)
Like I just hate that we made cucumbers trendy.... What is wrong with us?
