Everything you want in a Pancake , Pancakes

I guess I should start this blog off first and foremost ( because I know ALL of you were wondering ) , Alex did not get me the facial steamer for V-Day . We both showed up at home after work with bottles of liquor for each other and homemade cards so , If that ain't love ... I am lost . It was perfect... and concerning at the same time :) So , With that being said I hope everyone had a lovely evening or day or night with maybe some shrimp and pasta !?


Onto today's announcement- The pancakes. Ugh , they were perfect .

" These are the best pancakes I have ever had in my entire life " - Alex . He truly is so poetic.


Sunday morning calls for pancakes . Period . They are beautifully fried in a couple tablespoons of veg oil , Making for a very crispy, and like I said " fried" comforting yumminess. More savory than sweet, I was thinking of latkes as I was over the cast iron . They are wonderfully fluffy , I used both baking powder and baking soda and very Sunday Breakfast. They are also extremely photogenic which is the only reason I ended up writing this blog on them . They are worth it .


Ingredients

1 cup butter milk ( 1 cup milk: 1 1/2 tbsp white vinegar)

1 egg

1 tsp baking soda

1 tsp baking powder

1 1/2 cup AP flour

pinch salt

3 tbsp melted butter


  1. Whisk flour , baking powder, baking soda and salt together in a bowl

  2. In another medium bowl add your egg , buttermilk and butter and whisk together until egg is incorporated , Gently whisk this wet mixture into your dry mixture until mostly combined . You want to be careful not to over work this batter so Mix it just enough that everything is combined - its okay if there are a couple lumps here and there .

You can set this batter covered in the fridge for up to two hours

3. Heat a large cast iron pan or griddle on medium heat for a few minutes or until visibly hot . Add about 3 tablespoons of oil to your pan once hot , wait a minute for oil to heat up . Ladle about 1/3 cup batter into the pan ( you can do more than one depending on the size of your pan ) and cook until you begin to notice the edge of the outside of pancake crisping up and the top producing a few bubbles ( this will take 2-4 minutes ) , flip . Let cook for another minute or two .


I was making a bunch at a time so I set my oven to 325 and kept my finished pancakes on a sheet pan while I was frying the others.
